I’m not sure why but I think its a linking issue.

Kathi, what a great question! I love cooking and trying new recipes. Our favorite dinner main course is Ranch Chicken. 6 boneless, skinless chicken breasts, cut into thirds, 1 c crushed Corn Flakes, 1 c Parmesan, 1 pouch Ranch dressing mix, 4-5 egg whites. Dip chicken in egg whites and then mixture of Corn Flakes, parmesan and dry ranch dressing. Bake 350 for 30-35 minutes. Enjoy!
We make quick chili. Brown ground beef, turkey, chicken or game (venison is a staple around our house) , approximately 4 oz per person, but the leftovers are great on eggs the next morning. After the meat is browned, add salsa, your favorite kind (hot, medium, or mild) to make the consistency your family likes. We prefer it chunky rather than runny, unless we are having it with cornbread. Adding beans, any kind , is an option, even mixing black beans with white northern beans looks pretty. Serve with brown rice (instant), white rice, leftover noodles, put on top of baked potatoes, or the classic cornbread or corn muffins. Side salad optional; can also add mixed cooked veggies to the chili.
Quick French Dip
1 lb. roast beef (sliced) from the deli counter
1/2 lb. sliced provolone
1 onion chopped
1 bell pepper chopped
4 – 6 french rolls
1 packet of Au Jus mix (Lawry’s)
Follow the directions on the side of the au jus mix. Create and set aside.
In a large skillet, add onions and peppers until almost cooked, but not overly softened.
While they are cooking, open french rolls and place open in toaster oven (or in conventional oven) with provolone cheese. Toast.
Just before onions and peppers are perfect, add roast beef to skillet for 1 minute (to warm up only, but not to really cook).
Put au jus into one small ramekin for each person.
Put toasted cheese bread on plate. Pile roast beef, peppers, and onions on top. Close and serve with au jus on the side.
Enjoy and rejoice that it took you less than fifteen minutes to make a yummy meal. Add a salad for sheer perfection. 🙂
Our favorite go-to meal that is super-duper quick is a pesto dinner. The sauce is so versatile. You can use it as a sauce for spaghetti, glaze it on your chicken, spread it on pizza instead of a marinara, or put it on some toasted french bread and add oven-baked tomatoes on top. So yum. Here’s my favorite version that I have made.
Pesto
1/3 cup walnuts
2 cups loosely packed basil
2 garlic cloves, minced
1/3 cup olive oil, the one that is light in flavor
1/2 cup parmesan cheese
1. Add walnuts to food processor, and process until walnuts are finely chopped.
2. Add basil and process until walnuts and basil have been mixed well together well (you might have use a spatula to push down the sides a couple of times).
3. Add minced garlic. Process again.
4. Stream the olive oil in a slow stream while processing it into the pesto mixture.
5. Add parmesan cheese and process one more time (about 30 sec to 1 min).
Serve warm, cold or you can freeze it for another time. YUM! Makes about 3/4-1 cup.
1. Noodles – cooked in a wok or frying pan
2. Stir fry vegetables – zucchini (courgettes for us Brits!), onions, sugar snap peas, baby corn, chopped peppers & whatever else you like, cooked in wok or frying pan.
3. Chicken pieces – either roast a chicken & shred slices off or fry some pieces of chicken breast into small strips. (start this first out of the 3 points).
Put all 3 into sepaate dishes so people can help themself to what they like. Vegetarians can avoid the meat & those on low carb diets can avoid the noodles! Perfect! Quick and easy too. Add a bowl of ground peanuts to sprinkle on top (for those without nut allergies). Ketchup goes nicely
