Now that you can conquer breakfast let’s focus on lunch. I find most people do not think about lunch. Grabbing take out or whipping through a drive thru takes no thought and is super easy but super hard on the hips and pocket book. Lunch is, well, kind of boring. Some eat alone, in front of their computer or have little time to eat due to work or feeding little ones and getting them down to nap.
For those who work you also must think about lunch when you are thinking about or handling breakfast. So how do you go about in a stress-less way while making it healthy at the same time?
- For starters there are many things you can do at night to make your lunch a grab and go as you walk out the door.
- Plan your lunches like you do your dinners and shop accordingly.
- Grab some of those easy items at the store: snack packs of pretzels, carrots, fruit, nuts and cheeses.
- Prepare your lunch while you make dinner. Make an extra serving or two so you and your husband have lunch the next day. If you want to trim your waist line or your bottom line then just take half of your regular portion and place it in a container for lunch as you are plating dinner.
- Do the prep work before bed; the slicing, cutting, placing in bags, or putting leftovers in a container so you can reheat at the office.
- Pack all the items you can in your lunch bag at night. Fill your water bottle and that will just leave you to grab only the refrigerator items in the morning.
- You could also do all of the above on the weekend. Spends a few hours prepping and sorting foods to cut down on daily prep time.

I def do the taking leftovers or lunch thing. I also Stock up on healthy choice and lean cuisine frozen meals when they are on sale. I also have a secret stash of fio in my desk drawer – almonds, soup, crackers etc just in case I run out the door without my lunch.
We usually have leftovers from the previous night’s dinner for lunch the next day. And if there isn’t anything left over, we always have bread around for sandwiches. The girls are home with me for all our meals, so sometimes we do a “school lunch” lunch.
The kids and I eat lunch at home everyday. Mostly sandwiches or soup. But for my husband who has to take lunch to work each day, we take the leftovers from our dinner and package them in small portions that he can grab and go. It’s already done for him in the morning or for the week, if the kids didn’t like dinner that night 🙂 And I get my pan back!!
I’m real big on making soup on Sundays. I’ll put chicken or beef in the big (12 quart) stockpot and fill with water. After that’s brought to a boil for awhile, I’ll skim off the foamy schmutz for the dogs (they love it on their food) and add celery, carrots, onion and whatever beans we feel like adding. The soup will be our dinner on Monday and for lunches all week, besides an additional dinner later in the week. This last time I made beef barley soup and found a recipe for Chicken Barley Chili on the barley box! (I’m making that today!)
I normally eat the leftovers, make hubby a sandwich or if we have meat I will make him a burrito then my daughter eats at school or I make her a sandwich for school then my son who is 3 just eats a bunch of snacks. Like a normal lunch for him would be a string cheese, some chicken nuggets, some fruit, and maybe a fruit snack.
We have a fridge at work and every week I stock it with lunch items for myself that include: yoghurt, hummus, carrots, Safeway Select soups, and fruit. I also keep a stash of oatmeal in my desk which makes a healthy meal when I add some fruit and nuts to it. Plus it’s very filling!
I’m not going to have anything noteworthy to contribute. All the info above is just great. I do want to share thing. Lunches are a great way to bond with your kid/spouse. For my boys I play little practical jokes like throwing in a dog biscuit or once I wrapped their sandwiches in layers and layers of commics. For my husband I like to write a little poem or once I stuck in a picture of me making a really ridiculous face. I know it makes an impression because never would the subject of lunch come up, but when I do something a little out of the ordinary it is the topic at the dinnertable.
I always have plenty of pre cut veggies around to throw together a quick salad or for a quick snack on the go!
