Hi Kathy and Erin, thanks for a great podcast this week – it ranks as one of my favorites yet! As for the summer recipe, we enjoy a watermelon and feta salad. My latest variation is to cut 1cm thick slices of watermelon, press out star shapes with cookie cutters, lay them out on a serving plate, sprinkle generously with crumbled feta, and drizzle (in a zig-zaggy pattern) reduced balsamic vinegar. For a bit of extra crunch I add either salted/soy-roasted sun flower seeds or toasted pine nuts but I do that right before serving so they don’t get soggy. Thanks!

Zucchini, yellow squash, and corn are all abundant during the summertime. This family favorite recipe uses all of those yummy vegetables and puts a fresh Mexican spin on it. The Chicken and Summer Vegetable tostadas are my favorite hot weather meal. For quick and easy sides, I use the chimichurri rice from the frozen aisle at Trader Joes and a can of black beans warmed up with some salsa. I think I know what’s for dinner tonight….

My 8-year old son has a passion for making fruit salad. It is so easy for him (or me) to grab a few kinds of fruit that we have in the fridge, chop it up, and call it good. This is a great way to use up that last kiwi, nectarine, pear, etc.. It is also a great way to introduce a new fruit to my kids. We did this with persimmons this winter and they were a hit!

I stick at meal planning. I try to plan but never get it done like I would like. SInce starting The Daniel Plan a month ago I am better but there is still room for improvement.
